CONJURING FROM THE CUPBOARD (PART 3)

I missed my regular shopping days this week due to intervening holidays (Oct. 12 is Fiesta Nacional/Día de la Hispanidad, or Spanish Columbus Day, and Oct. 15 is Santa Teresa, a local holiday in my town). Nothing fresh in fridge or freezer. Time to conjure dinner from the pantry.

Sardine burgers to the rescue. These are quick to prepare. They can be served on buns or plated with salad (coleslaw would be perfect, but I had no cabbage) and fries.

A few cans of sardines become dinner for two or three.

Serve the burgers on buns with a tangy sauce and crunchy onions.

Sardine Burgers
Hamburguesas de Sardinas

Makes 6 (3-inch) patties.

3 (4-ounce) cans sardines (1 ¼ cups drained)
Grated lemon peel
1 tablespoon lemon juice + more for the sauce
2 tablespoons chopped parsley
3 tablespoons finely chopped onion
3 tablespoons chopped green olives
2 eggs, 1 hard-boiled and chopped, 1 lightly beaten
Salt to taste
Freshly ground black pepper
Pinch cayenne
¼ cup fine dry breadcrumbs +more if needed
Olive oil for frying
1/3 cup mayonnaise
¼ cup chopped sun-dried tomatoes
½ teaspoon smoked pimentón (paprika)
Buns to serve (optional)

Drain the sardines of oil and place them in a bowl. Use a fork to break them up into small pieces. Add the lemon peel, juice, parsley, onion, olives, and chopped egg. Stir in the beaten egg. Mix well. Taste and add salt if needed. Season with pepper and cayenne. Add ¼ cup breadcrumbs and mix well. Take up a small handful of the mixture and press into a ball, then flatten to a patty. If mixture seems too soft to shape, add additional breadcrumbs. The sardine patties can be shaped in advance of cooking and kept, covered, in the refrigerator.

Pan-fry the burgers.

Heat enough oil to cover the bottom of a large skillet. Fry the patties on medium-high heat until browned on one side. Flip them and fry the reverse sides.

To make the sauce, stir together the mayonnaise, tomatoes, and pimentón. Add a few drops of lemon juice to taste.

Serve the sardine patties on buns, if desired.
